I baked this beautiful brioche on thursday and it was just screaming to be turned into french toast.
So, on Friday we had an NFL french toast brunch.
French toast with turmeric, ginger, and pepper infused pears, red currants, and freeze dried raspberry powder.
This is Justine's plate. In case you could not tell she is Canadian and loves her maple syrup!

Two Banana Bean Burgers and a Blueberry Scone.
Yup, you read that right- Banana Bean Burgers. Sounds crazy I know, but they actually taste delicious!
3/4 cup chickpeas (peeled)
1 banana, mashed
3 tbs nut butter
1/4 heaping cup rolled oats (ground into oat flour)
1/4 heaping cup rolled oats
1 tbs maple syrup
1/3 cup blue berries
Mash the chickpeas with a fork or in a food processor. Add the rest of the ingredients except for the blueberries and stir/mash to combine. Fold in blueberries. Divide into patties of desired size. Cook in a skillet over medium heat for about 4 mins per side. Enjoy on a bun or topped with more fruit and maple syrup like you would pancakes.
