Quinoa Porridge

Quinoa Porridge with Peaches and Peanut Butter. 

Quinoa Porridge (serves 1)
1/4 cup quinoa
1¼ cup milk
1 Tbs chia or flax seeds
1-2 tsp maple syrup
1 egg

Rinse quinoa. Combine 3/4 cup of milk, quinoa and spices in a saucepan. Cook over medium heat for about 20 mins or until the liquid has been absorbed. You will need to stir frequently so the milk does not burn. While the quinoa cooks, whisk together the remaining 1/2 cup of milk with the egg, maple syrup and chia or flax seeds. Once the quinoa is cooked, turn down the heat to low and stir in the egg and milk mixture. Cook over medium low heat until the mixture thickens and the egg has cooked through.
