Zucchini Bread Pancakes with Maple Almond Butter Sauce and Banana.
Pancakes (serves 1):
1/4 cup four (I used spelt)
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 egg or flax egg (1tbs flax mixed with 2 tbs water)
1 dl greek yogurt
1 tsp sugar
~1/4 cup grated zucchini
Mix dry ingredients in one bowl and wet ingredients in another. Combine but do not over mix. Cook in a skillet over medium heat. I suggest topping with Banana and Nut Butter but Syrup and Walnut or Pecans would be excellent as well.
