The things you do for love...

So this morning I woke up wanting another plate of Pumpkin Pancakes. I set out into the kitchen and prepared a beautiful stack of pancakes. As I was collecting my things to return to my room, the plate slipped out of my hand and crashed on to the floor leaving my pancakes in a heap and my plate broken :(

But my love for these pancakes is too strong. I quickly whipped up another batch and they were even more delicious that I had hoped!

 Pumpkin Pancakes with Vanilla Yogurt, Chocolate Almond Butter and Sprinkles!

Snow Day

Snowman Pumpkin Pancakes on this snowy day! 

These pancakes were so good! 

It is going to be hard not to eat them morning, noon and night.

Recipe:

Dry-

1/4 cup Flour

1/2 tsp Baking Soda

1/4 tsp Salt

Cinnamon 

Nutmeg 

Wet-

1/4 cup Pumpkin

1/4 cup Yogurt (I used Vanilla)

1 egg white

First mix dry and wet separately, then combine. Do not over-mix. Pour pancake batter into your desired size and shape in a pan over medium heat. Cook, flip, plate and eat.
