æbleskiver are Danish pancakes with a distinctive spherical shape. I just used regular pancake batter in this æbleskiver pan and stuffed each with a little slice of banana.

Buckwheat Pancakes
[Vegan] Buckwheat Pancakes with Peanut Butter and Banana.

Pancakes:
1/3 cup Buckwheat Flour
3/4 tsp Baking Powder
Dash or two Cinnamon
Pinch of Sugar
Pinch of Salt
1/2 Banana, mashed
1/4 cup Almond Milk
1/2 tsp Vanilla
Combine dry (flour, baking powder, and spices) in a bowl. Combine the wet (banana, milk, vanilla) in a separate bowl. Add wet to dry. Cooke. Top. Eat.

Porridge
Steel-cut Oats, Quinoa, Amaranth Pumpkin Banana Porridge topped with Sesame Seed Almonds.
Porridge (serves 2):
1/4 cup Steel-cut Oats
1/8 cup Quinoa
1/8 cup Amaranth
3/4 cup Almond Milk
3/4 cup Water
1/2 cup Pumpkin
1 banana
a splash of Vanilla Extract
Pumpkin Spice
Combine grains, vanilla, water and almond milk in a small pot. Bring to a boil and then reduce the heat to medium low and allow to simmer for about 20 mins. Once most of the liquid has been absorbed add the banana, pumpkin, and spices. Wisk until well combined and banana has melted into the porridge.
