Pumpkin Pudding with Raw Oats, Smart Bran, and Mixed Nut Butter.

Pumpkin Pudding:
1/2 cup Pumpkin
1/2 Banana, Mashed
2 tbs plain Greek Yogurt (all that I had left)
1 tbs Peanut Flour
1 tsp Chia Seeds

Put in refrigerator overnight. In the morning, top with something crunchy (cereal, granola, pretzels...) and a dollop of nut butter.

Smart Bran Pancakes with Homemade Cinnamon Raisin Peanut Butter and Apricot Raspberry Jam.

I invented a pancake recipe using Smart Bran cereal. The pancakes were good but I think the recipe needs some more tweaking before I post it.

French TOats:
Maple Instant Oatmeal with a Whole Egg cooked in and Sliced Banana on top.
Adding an egg really bulks up the oats, adds a delicious rich flavor, and souffle-like texture.
