Weetabix Cereal in a Jar with the last of my homemade Maple Almond Butter, an Apple and Warm Milk.

Banumpkin Cake

 Pumpkin Bulgur Porridge Cake with Peanut Butter Frosting and Banana Chips (thanks Gaby!)
Coffee.

Porridge Cake (serves 2)
1/2 cups medium grain Bulgur
1 cup Milk
1 cup Water
2 tbs Raisins
1/4 cup Pumpkin
1 tbs Brown Sugar
1/2 tsp Cinnamon

Put all ingredients in a pot. Bring to a boil. Reduce the heat and simmer for about 30 mins or until liquid has been absorbed and the bulgur is no longer crunchy and the porridge is thick. Allow to cool slightly. Pour in to a container and store in the fridge overnight. In the morning slice in half and cook in a skillet until warmed through and then outside is slightly crisp and caramelized. Delicious!

Bulgur is a delicious substitution for oatmeal. It had a wonderful thick and chewy texture!

Veggies for Breakfast

 Zucchini Bread Pancakes with Maple Almond Butter Sauce and Banana. 

Pancakes (serves 1):
1/4 cup four (I used spelt)
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt

1 egg or flax egg (1tbs flax mixed with 2 tbs water)
1 dl greek yogurt
1 tsp sugar
~1/4 cup grated zucchini

Mix dry ingredients in one bowl and wet ingredients in another. Combine but do not over mix. Cook in a skillet over medium heat. I suggest topping with Banana and Nut Butter but Syrup and Walnut or Pecans would be excellent as well.

Smoothie:
1/2 cup homemade apples sauce
1/2 cup greek yogurt
1/4 cup milk
~3tbs oats (for thickness)
1 tbs peanut butter

 Oatmeal with Homemade Applesauce and Raisins with a dollop of Turkish Yogurt and a drizzle of Maple Syrup.
Coffee with a splash of Milk.

Stewed Apples

Stewed Apples with Strawberry Skyr Yogurt and Granola.
Cafe au Lait.

Monday, January 2

Pancakes

 Pancakes with Berries and Peanut Butter.

Pancakes for one:
1/4 cups flour
1/2 tsp baking soda
1 container greek yogurt
1 egg
Beat together egg and yogurt. Stir baking soda into flour. Combine wet and dry ingredients (batter will puff up and become fluffy from the baking soda).  Cook in a pan over medium heat. Serve and eat.
